Strawberry Caprese Pasta Salad

  1. Cook pasta per package directions. Drain and run under cold water to cool to room temperature.

  2. In a large bowl, whisk together vinegar, mint, oil, shallot, and a pinch each salt and pepper.

  3. Add pasta to the bowl and toss to coat. Fold in strawberries and mozzarella; season with salt and pepper and top with additional mint, if desired.
